An easy recipe that will convert ANY broccoli hater out there…
Recipe:
Serves 7-8 as a side dish
Ingredients:
2 Large Heads of Broccoli or 3 Medium Sized Heads - cut into florets
Spray oil
Garlic powder
Onion powder
Salt
1 cup Shredded Carrots
1 - 6oz Container Crumbled Feta
1 cup Slivered Blanched Almonds
1/2 cup Dried Cranberries or Dried Currants
Sauce Ingredients:
1/2 cup Low Sodium Soy Sauce
1/4 cup Low Sodium Teriyaki Sauce
1/4 cup Golds Sweet Honey Mustard
2 tbsp Sesame Oil
2 tbsp Sriracha Sauce
Directions:
1) Preheat oven to 375 degrees. Line a baking sheet with parchment paper and lay out the broccoli (it will overlap a little and that is okay). Spray with oil and season with garlic powder, onion powder and salt. Cook for 30 min and then set aside.
2) Mix sauce ingredients in a small bowl until combined.
3) Using a large bowl, add broccoli, and the rest of the bulk ingredients. Add the sauce and mix until combined. Let sit in the fridge for at least 2 hours to marinate. Re-mix and serve!
