Smoked Salmon Bites

Situation: you are having a party and want to impress your guests. However, you don’t want to put a lot of work into making a fancy appetizer. Don’t you worry my friend! I have your “fancy” appetizer recipe that is not only easy, but it is also healthy! This recipe will take you a max of 10 minutes to make and your friends will love having a flavor packed treat before dinner.

Recipe:

An Appetizer for a Gathering

Ingredients:

1 - 8 oz Package Wild Caught Smoked Sockeye Salmon

1 Small Container of Whipped Cream Cheese (can use low-fat if trying to cut calories)

1 Small Bag of Bagel Chips (I used New York Style) OR 2 Long English Cucumbers

The Zest of 1 Lemon (put in a bowl)

Directions:

1. Cut the salmon into 1 1/2 inch pieces, or cut to fit the size of the cracker you are using.

2. If using cucumbers, cut on a diagonal and with 1/4 inch thickness. Place your cucumbers or crackers on a platter.

3. Evenly spread 1 tsp of cream cheese on each cracker or cucumber. If using cucumbers, you may need to use 2 spoons to place the cream cheese. The cucumber can be slippery and harder to spread the cream cheese onto (still totally do-able though!).

4. Place your salmon pieces onto the cream cheesed crackers or cucumbers. Spread 1/8 tsp (or a sprinkle) of the lemon zest on each bite. Serve immediately!
