I was making my friend a steak dinner one night and what goes best with steak?....A nice caesar salad! However, even though these salads taste amazing, they can be very heavy and have a stupid amount of added calories. I was determined to make a flavorful version with half the calories!
This recipe is made with a majority greek yogurt and only 1 tbsp of mayo! Not only is it healthier, it has added protein from the greek yogurt. Now you can have your favorite caesar salad without feeling guilty. Maybe you should get that extra glass of wine now that you cut those calories (hahah).
Recipe:
Makes 2 cups of dressing
Ingredients:
1/2 cup + 2 tbsp 2% Low-Fat Plain Greek Yogurt (I used Cabot Cheddar)
1/2 cup Parmesan Cheese
1 tsp Dijon Mustard
2 tbsp Extra Virgin Olive Oil
1 tsp Worcestershire Sauce
3/4 tsp Garlic Powder
3/4 tsp Anchovy Paste
3 tbsp Lemon Juice Concentrate
1 tbsp Mayo (Hellmans is the best!)
Directions:
1. Whisk all of the ingredients in a bowl until smooth and evenly combined.
2. Use the dressing to dress a chopped romain salad with some shaved parmesan cheese, cracked black pepper and homemade croutons (check out my recipe or get good quality croutons at the store).
