Italian Roasted Asparagus

I love this side dish because it is SO easy, but also pretty and colorful! It will definitely impress anyone you bring over!! The prep time takes MAYBE 5 minutes and then the oven does all the work. It is also a very healthy side dish with all of the vegetables and minimal fat. You don’t need a lot of fat and salt to make food taste amazing!


Recipe:

Serves: 4 as a side dish

Ingredients:


1 bunch Fresh Asparagus - cut 1 inch off the bottom

1 - 7 oz Jar Cento Roasted Red Peppers - chopped

1 pint Cherry Tomatoes - sliced

1 Small Visalia Onion - sliced (1 cup)

2 tbsp Extra Virgin Olive Oil

Garlic Salt

Generic Dried Italian Seasoning

Parmesan Cheese (for a light seasoning)

Spray Oil

Directions:


1. Preheat the oven to 375.


2. Line a sheet tray with foil and then spray with oil. Spread the asparagus on the pan in an even layer, but still close that they are touching.


3. On top on the asparagus, layer the onions, tomatoes and roasted red peppers. Evenly drizzle the 2 tbsp extra virgin olive oil and season with garlic salt, Italian seasoning and parm cheese.

4. Roast for 40 min or until the asparagus are fork tender. Then, broil on high for 2-3 minutes or until the part cheese is lightly browned. Serve immediately!
