In my opinion, chicken thighs are the best part of the chicken. They have the most flavor and they are hard to overcook! They also are full of great nutrients!
This recipe utilizes boneless skinless chicken thighs, so you don’t have to worry about the bone. They also cook faster than regular thighs. This particular recipe satisfies that parm/creamy craving without cream! Instead I use greek yogurt to provide that “creaminess” and also keeps the chicken moist while cooking. This will definitely be a sheet pan meal that everyone will love!!

Recipe:
Serves: 3 if 2 thighs per person, or 6 if 1 thigh per person
Ingredients:
6 Boneless Skinless Chicken Thighs
1 tbsp Low Fat Greek Yogurt per Chicken Thigh
1/4 tsp Garlic Powder per Chicken Thigh
1 tsp Parmesan Cheese per Chicken Thigh
1/2 tbsp of 4 Cheese Pizza Blend per Chicken Thigh (I use ShopRite brand)
Directions:
1. Preheat the oven to 350 degrees.
2. Line a sheet tray with parchment paper and evenly spread out each chicken thigh on the baking sheet. Assemble the chicken by first spreading the yogurt, then sprinkle the garlic powder, and then the parm and lastly, top with the 4 cheese blend.
3. Cook the chicken for 40 minutes. Then, take the chicken out of the oven, cover with foil, and let the thighs rest for 5-10 minutes.
4. Serve with a side of spaghetti squash or a little pasta and salad!
