These eggs in a nest are the perfect thing to impress company! They are so cute and are packed with nutrients from the sweet potatoes. The only “long” part is the grating of the sweet potatoes. Other than that, it is a pretty easy breakfast to make for you and friends and family.
Recipe:
Makes 12 Egg Nests
Ingredients:
1 lb Sweet Potatoes (or Yams) - peeled and shredded with the large grater setting
Salt and Pepper
Spray oil
Directions:
1. Preheat the oven 375.
2. Using a towel, squeeze out any liquid in the shredded sweet potatoes.
3. Spray the muffin tin with the spray oil. Put a little over 1/4 cup of the shredded sweet potatoes in each cup and push on the bottom and around the walls (making the nest for the egg). Season with salt and pepper and spray lightly with oil.
4. Cook for 30 min or until the sweet potato nests are browned and set. Remove from the oven, add an egg in each “nest” and return to the oven for an additional 13-14 minutes or until egg whites are set but yolk is still runny.
5. Using a butter knife, carefully loosen the edges and bottom of each nest and remove fro the tin. Serve with your favorite slice of bread and a nice hot cup of coffee.
