Want Indian flavors but don’t fell like cooking for hours? This is a SUPER EASY recipe that tastes like a restaurant quality dish. Also, it doesn’t have crazy ingredients that you have to go hunt down. Simple, healthy and delicious!!
Recipe:
Serves 4
Marinade Ingredients:
2 lbs boneless skinless chicken thighs
2 cups 2 percent Greek
1.5 tsp garam masala
1 tsp garlic salt
1 tsp garlic powder
1 tsp ground ginger
1/2 tsp cayenne
2 tbsp lemon juice
Cucumber Yogurt Sauce:
1 cup 2% Greek yogurt
1 cup English cucumber
1/4 cup mint - finely chopped
2 tbsp lemon juice
1/4 tsp cumin
1/4 tsp garlic salt
Directions:
1) Combine marinade ingredients with chicken and marinade at least 8 hours or overnight.
2) Preheat the oven to 400 degrees.
3) Using a grill pan, large skillet (must be oven safe), or cast iron pan, spray with oil and turn to medium high heat. Add chicken and cook for 6 minutes. Flip, and cook an additional 3-4 or until browned.
4) Place chicken in the oven for 20-25 minutes, or until fully cooked. While chicken is cooking, make the Greek yogurt sauce for a topping.
5) Once the chicken is done, serve with cucumber yogurt sauce on top and a side of basmati rice!
