A delicious side dish for your next summer meal. Not only is it refreshing and full of flavor, it is also SO EASY! I feel like this recipe would take someone a max of 10 minutes to make. Recipe:
Serves: 6-7 people as a side dish
Ingredients:
1 - 15.5 oz Can of Cannellini Beans, Rinsed
1 - 14 oz Can Quartered Artichoke Hearts in Water, Roughly Chopped
1 cup Cherry Tomatoes (I Used Heirloom Cherry Tomatoes From Costco), Quartered
1 tsp Lemon Zest (zest of 1 lemon)
2 tbsp Grated Parmesan Cheese (I used Locatelli)
1/4 tsp Salt
1/8 tsp Ground Black Pepper
2 tbsp + 1 tsp Fresh Squeezed Lemon Juice (Juice of 1 Lemon)
1/2 tbsp Pesto
Directions:
1. Add everything besides the pesto and lemon into a large bowl and mix until everything is evenly combined.
2. 1 hour before serving, add the pesto and lemon juice and mix until the pesto is evenly distributed in the salad.
