Writer's picture: foodiewithflavorfoodiewithflavor

People are scared of fish because they think it is hard to cook or that they don't know how to cook this amazing protein. I want to show people that they shouldn't be intimidated! Especially when they follow this particular recipe. It only takes 5-6 minutes to cook after prepping the ingredients, it is healthy and it tastes amazing too!

I also know when people think salmon and they think "overcooked" and it is only prepared with lemon. Don't get me wrong, lemon salmon is still yummy, but I want to show others that there are other ways to cook this fish. So, if you are a first time fish chef, or want to try a new salmon recipe, I would impress two of your friends or family members with this easy recipe.

Recipe:

Serves: 3

Ingredients:

3 Salmon Filets With Skin

1 cup Cherry Tomatoes - Chopped

1 1/2 tbsp Packed Basil - Chopped (around 15-20 small leaves)

1 tbsp Light Oil

1 tbsp Butter

Garlic Powder

Garlic Olive Oil (or Extra Virgin if you do not have garlic olive oil)

Salt

1/4 cup Good Quality Balsamic

Directions:

1. Season the non-skin salmon side with the garlic oil and a light seasoning of salt and garlic powder.

2. Using a cast iron skillet, heat the light oil and butter over medium-high heat. When hot, add your salmon skin side down, cook for 2-3 min or until lightly browned on the skin side.

3. Flip your salmon and turn the heat to medium-low. Add your tomatoes, balsamic and basil. Cook for an additional 2 minutes or until the salmon is cooked to your desired doneness.

4. Serve each salmon filet with some of the tomato basil mixture on top.
